This co*cktail has a wonderful balance of sweet, tang, and zing. It is a little twist on the classic Peurvian co*cktail, Pisco Sour. Moreover, I learned how to make this drink while in Cusco, Peru. So it is 100% authentic!

Drinking Pisco Sours in Cusco, Peru

I will never forget all of our times drinking Pisco Sours in Peru. It was all my sister, and I talked about before our trip to hike Machu Picchu.

So the night we arrived at our hotel in Cusco, we went to the bar to order our first Pisco Sour. It was delicious! After the first Pisco Sour, they just kept coming.

Towards the end of our trip, we enjoyed a fun cooking class in Cusco. First, the chef took us to a local market and we learned a lot about the food used in Peruvian cuisine. One in particular was passion fruit. We purchased several fruits and vegetables including passion fruit before walking to the cooking studio.

It was then that we learned we were going to make a Passion Fruit Pisco Sour! The chef walked us through every step which is why I know exactly how to make this recipe.

We also learned how to make traditional Peruvian ceviche, potato layered dish, a mushroom quinotto, and chirimoya dessert. If you ever visit Cusco, Peru, you should definitely enjoy a cooking class.

What is a Pisco Sour?

A Pisco Sour is the national drink of Peru and Chile. You can find it at every bar and restaurant as it is beloved by both locals and tourists.

Despite being a simple drink, it tastes luxurious. It only takes a few key ingredients to make a Pisco Sour – Pisco, lemon juice, simple syrup, and egg whites – that’s it!

Today, there are other variations such as my own, Passion Fruit Pisco Sour. Other flavors you can try include mango, pineapple, blackberry, blood orange, and grapefruit.

What is Pisco?

Pisco is a type of brandy that has been distilled from fermented Peruvian grape musts and juices. It is commonly produced in Peru and Chile, where the two countries often battle claims as to who invented it first.

Although Pisco is a brandy, it does not taste like a Cognac but rather a Grappa. Some even suggest that Pisco tastes similar to Tequila because of its herbal and earthy flavors.

Of course, the two main ingredients of a Passion fruit Pisco Sour is the passion fruit juice and the Pisco.

For the passion fruit juice, you can use fresh, frozen, or bottled juice. If you want to use fresh passion fruit, it can get expensive, so plan accordingly. It took about 6-8 passion fruits to get 2 ounces of fresh juice. See notes in Tips and Tidbits below.

  • Passion fruit juice, fresh or frozen

How to Make a Passion Fruit Pisco Sour

Make a simple syrup – in a small saucepan, bring the sugar and water to a boil. Once the sugar dissolves, turn the heat off and cool completely. Set aside. This can be made ahead of time.

Mix ingredients and dry shake – pour the passion fruit juice, simple syrup, lime juice, and egg white into a co*cktail shaker and shake vigorously for 10 seconds.

Wet shake – Add the ice cubes to the co*cktail shaker and shake again for another 10 seconds.

Pour and enjoy – pour the co*cktail through a strainer and into a chilled glass. The liquid will pour first, followed by a cloud of egg-white foam. Sip and enjoy!

How to Get Fresh Passion Fruit Juice

If you want to use fresh passion fruit juice for this Pisco Sour recipe, here is how to do it.

Cut the passion fruit in half and set it on a surface, cut side up, to reveal the fruit pulp.

Using a spoon, scoop everything out including the fruit pulp, seeds, and juice. You want to scoop the fruit pulp over a bowl so you do not lose any liquid. Repeat the processes above for all the passion fruit.

Pour everything (fruit pulp, seeds, and juice) through a strainer and into another bowl. You may need to use a rubber spatula to help squeeze all of the juice out.

Viola! You have fresh passion fruit!


What is an Egg White Foam?

An egg white foam is becoming more common than ever on co*cktails. It provides co*cktails with a chic look and silky texture without affecting the taste of the drink.

Despite being tasteless, the egg white foam has a rich, creamy body, so every sip from a co*cktail is silky smooth. If you are weird on textures, you can omit the egg white foam.

Tropical Passion Fruit Pisco Sour co*cktail

A classic Peruvian co*cktail with a sweet and tangy twist. This refreshing co*cktail will quickly become one of your favorite drinks.

Ingredients

  • 4 ounces Pisco
  • 2 ounces passion fruit juice, fresh (about 6 passion fruit) or frozen
  • 1/4 cup fresh lime juice, (about 1 - 2 limes)
  • 1 egg white, fresh
  • 1/4 cup sugar
  • 1/4 cup water
  • 6 ice cubes

Instructions

  1. Make a simple syrup. In a small saucepan, mix the sugar and water and bring to a boil. Once the sugar has dissolved, turn the heat off and cool down the simple syrup. This can be made ahead of time. Set aside 1.5 ounces of simple syrup.
  2. Add the Pisco, passion fruit juice, lime juice, egg white, and 1.5 oz of simple syrup in a co*cktail shaker. Cover the co*cktail shaker and shake as hard as you can for 10 seconds.
  3. Remove the lid, add the ice cubes, cover, and shake again for 10 more seconds.
  4. Pour the Passion Fruit Pisco Sour through the co*cktail shaker strainer and into a chilled glass. The liquid will pour first, followed by the egg white foam to create its distinct foamy layer.
  5. Serve and enjoy.

Notes

You will need a co*cktail mixer for the egg whites to create its silky foam texture.

For a classic Pisco Sour, substitute the passion fruit juice for more lime juice. You can also substitute the passion fruit for your favorite fruit puree or juice.
