The BEST Carrot Cake Recipe • The Wicked Noodle (1)

I made a cake.

Carrot Cake.

It was also the BEST Carrot Cake recipe I have ever found.

And I desperately wish that this recipe for the BEST Carrot Cake of all time was actually mine. But I am not the one who created this perfect gem. Nope…I got this recipe from Southern Living. I’m also not the only one who love this cake. Chrissy Teigen raved about this cake on social media and John Legend described it as “Heavenly.” Seriously, it’s that good!

Ingredients & Equipment

Here are the kitchen items you’ll need:

  • 3 (9-inch) round cakepans
  • Bowls and electric mixer (or whisks) for mixing
  • Oven

Your ingredients:

Cake: This 3-layer cake is a mix of lots of carrots, crushed pineapple, coconut flakes and pecans or walnuts. Making a cake with pineapple makes it incredibly moist and the coconut and nuts add both flavor and texture.

Buttermilk Glaze: This particular carrot cake also has a lick-the-spoon-and-bowl-clean buttermilk glaze that seeps down into the cake while it’s still warm from the oven, making it incredibly moist.

Cream Cheese Frosting: The cream cheese frosting brings it all together as the smooth and tangy frosting seeps into the layers, creating an even more tender bite.

How to Make Carrot Cake

The full step-by-step instructions are below but this recipe couldn’t be easier to follow. Just mix the wet and dry ingredients in separate bowls while folding in the fruits, nuts and vegetables all into one bowl. Pour the batter into the pans and bake for 25 to 30 minutes.

You drizzle buttermilk glaze over the warm layers right out of the oven and the layers absorb every bit of glaze, then you frost with cream cheese.

I know you’re going to enjoy it as much as I did! And if you have a Best Carrot Cake Recipe that you think rivals this one, feel free to link to it (or share the recipe) in the comments section. The more Carrot Cake the merrier!

    FAQs

Why did my carrot cake flop in the middle? ›

The most common reasons a cake sinks in the middle include the following: The pan is too small. There's too much liquid. Opening the oven or moving pans during baking.

Why is carrot cake so nice? ›

The real stars of carrot cake are the spices. Cinnamon is always invited to the party, but which other friends come with is completely up to the baker. Nutmeg plays well, cardamom too. Try ginger or even turmeric, which will help up the orange color of the batter.

Why does my carrot cake fall apart when I cut it? ›

Yes, the carrots, but also typical extras like raisins, chopped nuts, or shredded coconut, which enhance the flavor and texture of the final result, add to the problem of cleanly lopping off a piece. For example, raisins create uneven pockets of moisture within the cake, causing slices to crumble more easily.

Why is my carrot cake moist but crumbly? ›

Overmixing: Overmixing the batter can develop excess gluten, resulting in a crumbly texture. Mix until just combined to avoid this. Incorrect Measurements: Accurate measurements are crucial for baking.

What is the fancy name for carrot cake? ›

Carrot cake (also known as passion cake) is cake that contains carrots mixed into the batter.

Why do carrots turn black in carrot cake? ›

Carrots contain pigments that are sensitive to changes in pH balance. When the shreds of carrot come into contact with the alkaline baking soda, a chemical reaction takes place that causes the pigments to change color.

What country invented carrot cake? ›

Carrot cake is thought to have originated in England where housewives used sweet products (e.g carrots) to naturally sweeten their confections during World War II.

Can I make a Disney cake and sell it? ›

Not legally – unless the copyright and trademark owner authorized such use. The Copyright Act protects against “derivate works” that use the copyrighted work as a jumping-off point in creating new work. Changing Mickey's pants from blue to red would still start with Disney's work, so it would infringe its copyrights.

How to decorate top of carrot cake? ›

Sprinkle nutmeg, candied carrots, and coconut over the top of the cake. Arrange them however you'd like, either around the border of the cake, piled in the center, or completely covering the top.

How do you stop a cake from collapsing in the middle? ›

Cake sinking after baking can be prevented by ensuring the oven is preheated correctly, using the right size of baking tin, avoiding opening the oven door too early, checking for doneness with a toothpick, and allowing the cake to cool gradually in the oven before removing it.

Why is my cake soggy in the middle? ›

A cake that's wet in the middle, in most cases, has not baked long enough. Put it back in the oven for 10 to 15 minutes. Be sure to check every 5 minutes with the toothpick test for any changes. If sliced, cover with aluminum foil to prevent the top from browning even more.

How do you stop a cake from peaking in the middle? ›

Pastry chef Cheryl Day offers another alternative: “lining the edges of the pan with a double layer of heavy-duty foil will prevent the pan from heating up too fast and help prevent the cake from doming in the middle.”
