Looking for a festive mimosa recipe? Look no further. Not only is this pomegranate mimosa incredibly easy to make, but it looks (and TASTES!) stunning. You know me, I had to add tequila to a mimosa co*cktail! So I did and came up with this Mexican mimosa. My tequila and champagne co*cktail is vibrant, and the pomegranate adds a sweet and tart flavor. It’s bubbly, light, refreshing, and delicious.

This mimosa co*cktail recipe is wonderful way to celebrate over the holidays, or for no reason at all, other than that it’s fun! You can alternate between this one and myholiday orange cranberry mimosa. 😉

What Is A Mimosa?

A mimosa is a drink often served for brunch or in the morning. It’s made with champagne and typically a citrus fruit juice. It’s light and refreshing!

What’s In A Pomegranate Mimosa?

While each mimosa recipe is a little bit different, these are the ingredients in my easy pomegranate mimosa:

  • Orange Juice – Gives a citrus flavor that tastes delicious with the combination of other ingredients.
  • Pomegranate Juice – This is what sets the drink apart and makes it the best mimosa recipe ever, if you ask me.
  • Lime Juice – For extra tang!
  • Silver Tequila – While not typically in a mimosa, it goes lovely in this drink and definitely is what makes it a Mexican mimosa! Feel free to skip it if you like, though.
  • Champagne – This is where you get those soft bubbles. Yum!
  • Agave Nectar – You can leave it out if you want, but it’s a great way to sweeten the Mexican mimosa a little.
  • Pomegranate Arils – Mainly they are just for appearance… so pretty!

How To Make A Pomegranate Mimosa

Making this pomegranate mimosa means more time socializing instead of in the kitchen. Here are the simple steps for you:

  • Combine agave with orange juice and mix well. Use a shaker if you have one.
  • Assemble drinks. Place some pomegranate arils at the bottom of a glass and add orange juice, pomegranate juice, lime juice, tequila, and champagne.
  • Serve!

How Much Alcohol Is In A Mimosa?

There are only 1 1/2 ounces of tequila and 2 ounces of champagne, so they are nice for light sipping and not too strong. You can leave out the tequila if you want to reduce the alcohol.

Can I Make This Mexican Mimosa Recipe Kid-Friendly?

Yes, you can simply leave out the alcohol to make them kid-friendly. Add some sparkling water instead of champagne, so it’s bubbly just like the adult drinks.

Can I Make Mimosas For Crowd?

Yes, absolutely, you can easily make this mimosa recipe for a crowd.

If you want multiple servings, simply change the number of servings on the recipe card on this post, and it will tell you exactly how much of each ingredient you need. Here are some ways to scale it to a larger amount:

  • You can make the mimosas in glasses ahead of time and top with champagne right before serving.
  • Combine everything except champagne in a bowl with a ladle. People can grab their own and just top with champagne from a bottle.

How Do You Store A Pomegranate Mimosa?

Ideally, you should drink the Mexican mimosa as soon as it’s prepared. If for some reason you can’t drink it all and want to save it, you can put it in a container and place it in the refrigerator. The champagne will probably go flat, though.
