If you want to make Greek Yogurt, use this 1-gallon yogurt strainer (purchase here) to strain the yogurt.

Ingredients

  • 1 Gallon Ultra-Pasteurized Milk
  • 2 Tablespoons Plain Yogurt with active cultures
  • 14 oz Can of Sweetened Condensed Milk (optional)

Method

  • 1)

    Pour all the ingredients in to the Instant Pot, stir very well with a whisk to ensure that the mixture is completely smooth. (Under mixing the starter or sweetened condensed milk can cause grainy / stringy texture). Seal the Instant Pot using the Pressure Cooker lid.

    *You can also make yogurt directly in jars. Fill the jars with the mixture & seal with lids. Pour 1 Cup of water into the pot and stack the jars inside the pot (you don’t need the trivet)

  • 2)

    Press Sous Vide to select the Sous Vide Smart Program. Use the + / − Time buttons to adjust the temperature to 113°F. Use the + / − Time buttons to adjust the cook time to 9 Hours and Press Start. Refrigerate for at least 4 Hours before serving.

  • 3)

    If you want to make Greek Yogurt, pour the yogurt into the gallon yogurt strainer (purchase here). Let it strain in the refrigerator for 10 hours or overnight. Enjoy!

    Do you have a way to do this with the Instant Pot / Air Fryer Duo crisp? It doesn’t have a Yogurt button.

    I have never seen a yogurt recipe that doesn’t start with boiling the milk. Why don’t you heat it up first? I really want to try this but am nervous about ruining all that milk. I’m hoping to make this in a few hours if you see this.

      Hi Kiara, this recipe uses Ultra-Pasturized Milk which has already been heated to 280°F – that’s why you don’t have to heat it up first. Standard Pasteurized Milk is only heated to 161°F which isn’t hot enough for yogurt making, that’s why you have to heat pasteurized milk.

        Hi! Is the consistency of the instant pot yoghurt the same as the store shop one? Just made half galon and it’s just hot milk. I don’t know what I did wrong (I halved the recipe)

          Hello, yes it’s supposed be like store bought yogurt. Did you use Ultra-Pasteurized Milk? The milk also should not feel hot, if it does then it’s not on the correct setting, it should be just slightly warm otherwise it kills the yogurt culture.

    Hello we live in Canada and I have tried to look for Ultra-Pasturized Milk. I was wondering if this brand will work to make the yogurt. Its Natrel Organic Fine-Filtered 3.8% Milk. It does say pasteurized at the side of the carton.

    Hi Elizabeth! Sorry if this is a stupid question, I’m a newbie in cooking. If the recipe is halved, do I need to cook it for 4.5 hours instead of 9h, or is the time the same even if the amount of milk and starter changes? Thanks a lot!!!

    I watched some other youtube and they said the silicone ring needs to be removed for yogurt making. Do I need to remove it to try this sous vide method for yogurt?

      Hello, no you don’t need to remove the ring, when making yogurt, it actually doesn’t make a difference if you have the ring on or off since it doesn’t get hot enough to pressurize

      Hello, yes you can boil regular milk first, just let it cool to 115F before adding the yogurt starter.

    I’d really like to try this but I dont know if I’m reading the recipe wrong. I don’t understand how I can sous vide this without putting it in jars. Also you say to just add i cup of water to the pot but if I’m going to use the sous vide method don’t the jars need to be covered with the water?

      Hi, this is a hack using the sous vide function, this is not a true sous vide recipe. All you’re doing is using the sous vide function to get the Instant Pot to the correct temp to incubate the yogurt cultures. Jars do to need to be covered in water.

    Thank you for your quick response. So if I don’t use jars I could just put the UP milk and condensed milk and starter into the pot and set it on the sous vide setting with 108 degrees? I can put it in a container(s) after it is done?

      If you don’t use jars, just place the mixture directly into the liner – sous vide setting should be 113°F. Yes you can move them into containers when it done.
