Goulash Soup

This soup is just like what we had as kids called “Goulash” or “Cowboy Delight” in soup form. And lets be honest, what kind of names are those for a dinner meal? Definitely not the classiest, but that doesn’t really matter I guess does it?

What really matters is that this isone hundred percent,homestyle comfort food right here. Just like what mom used to make.

I have been craving this stuff for years and everyone has always laughed and said “wait you like that stuff?”

Yes, I love the stuff and I was out to prove it can be delicious, so today I’m sharing my version that’s a step up from some of the sugary ketchup versions your mom may have made :).

Also, if you are like me and can’t resist, feel free to stir in somefrozen corn during the last few minutes of cooking to keep it authentic. This is a meal your whole family really will love. This is people food. Yes I love a really fancy meal on occasion but more than anything I just love the classics.

Beef and Tomato Macaroni Soup is one of the most comforting soups out there! It's filled with flavorful, pieces of grounnd beef, sweet tomatoes, hearty macaroni and a herbed broth. Destined to become a dinnertime staple!

Ingredients

Instructions

  • Heat 1 Tbsp olive oil in a large pot over medium-high heat. Add onions and carrots and saute 3 minutes then add garlic and saute 1 minute longer. Pour mixture onto a plate.

  • Heat remaining 1 Tbsp olive oil in pot over medium-high heat, add beef, season with salt and pepper and cook until browned. Drain fat from beef.

  • Return sauteed veggies to pot along with beef broth, tomato sauce, tomatoes, Worcestershire, marjoram, thyme, bay leaves and season with salt and pepper to taste. Bring to a boil. Add in pasta, cover and reduce heat to medium,. Boil stirring occasionally, until pasta has cooked through, about 15 - 20 minutes. If adding corn, stir in corn during last 3 minutes of cooking.

  • Remove bay leaves, serve warm garnished with fresh parsley and parmesan cheese if desired.

    I made this tonight. Didn’t use the corn, added tomatoes with green chilis and added more broth. It was delicious!

    Not sure where the near obsession with putting carrots in every recipe comes from. I eat and enjoy my share of the vegetable but I do not think it is some kind of superfood. (BTW, you can say the same thing about lemon as being horribly overused.) I’d recommend incorporating greater variety into flavor enhancers. Just saying, you know.

    This was tasty and easy. Having read Brandi’s comment I did not add marjoram. I also omitted thyme and just put in a teaspoon of Italian seasoning along with salt and pepper. I used 4 cups unsalted broth and only added 3/4 cup macaroni. The corn gave it a nice touch. Will make again.

    LEAVE OUT THE MARJORAM! The Marjoram gives it a nasty taste. I only put maybe a 1/8 tsp if that (nothing near what the recipe calls for). It was an easy recipe and I’ll make it again, just not add the marjoram.

    Just did this for dinner. With a few adjustments. As other people have said, it needed more liquid. The noodles are a sponge. So I added 1 more extra cup of beef broth, a cup of Better Than Broth vegetable base, and a teaspoon, ish, of Better Than Bullion Italian Herb base…..It was excellent! More than excellent! Make it now!Bsp

    Very good! I didn’t bother to remove the veggies before adding the beef. I also threw in a big Parmesan cheese rind for extra flavour when I added the beef broth.
