Festive Pecan & Cognac Pate - Mouthwatering Vegan Recipes « Mouthwatering Vegan (1)

ABOUT THIS RECIPE

A mouthwatering creation that cropped up in my mind before bedtime last night. I suppose subconsciously I have been rustling up ideas for the Festive Season. So here it is for you from me, in advance of ANY Festive Season. You will love how easy and fast it is to make this scrumptious recipe. I am so happy with the result !

Serves 2/3 persons as a starter

INGREDIENTS

  • 100 grams of pecan nut halves (fry them gently in olive oil for a few minutes, or roast if you prefer, and set aside)
  • 2- 3 garlic cloves
  • 2-3 sprigs of fresh flat leaf parsley
  • 1 fresh sage leaf (optional)
  • 1 tbsp vegan butter or margarine
  • salt to taste (don’t omit this please)
  • 2 slices of crustless wholemeal bread (wet in water and squeeze out excess water)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp cognac
  • a tiny bit of black pepper (optional)

METHOD

Place the nuts, garlic and parsley in a food blender and process until very fine (it will take a minute or so, so use your plastic spatula every few seconds to scrape off any excess on the sides of the bowl, and reprocess).

Now add the vegan butter, bread, olive oil and salt, and process for a further minute. At this point add the remaining ingredients and process again for another minute.

Useful Tip:

Scoop and serve in small little bowls with crudités, or perhaps small whole-meal toast wedges, crackers of your choice or even wholemeal pitta bread – whatever tickles your fancy ! Happy nibbling !

    Diane you are going to love this – I hate to preempt but if you loved pate then you’ll love this. Watch out for the cognac amount, remember some like it less and some like it more alcoholic than others – so taste in between pouring please for perfect results (same with the salt, it has to go in there in order to bite !. Enjoy & of course let me have your feedback at the time. We are having it here for the 2nd year running and we love it madly and truly.

    Hi there Leslie and welcome to my site. I have never tried it as a gluten free recipe. If you can get hold of gluten free bread that would sort your problem – otherwise it might be a DIY gluten free bread that you make and use the amount I recommend for this pate. It should work. The bread is needed for the bulk of it – it’s not impossible to achieve this gluten free, but it might take a little longer. The taste is sublime, so I do hope you give it a shot.     Mmmm…. This looks so good for the upcoming holidays! I think something like this might also be good as a sweet bar that could be made in a block then cut like a raw brownie… maybe held together with agave or something. My mind is racing… Your ideas always inspire me! Thank you, Miriam!

    Hi Gavin and welcome here. I really cannot say what would give you as good a result instead of garlic, since garlic is usually added to all commercial pates and is one of the main ingredients. You could try onion powder at a push. Good luck ! Cheers.

With regards to a sweet using pecans etc then that would be great too, I love pecans with both savoury and sweet they are that versatile. Come back with your feedback as and when. Remember taste it as you add the cognac, people’s taste differs, some like it more potent than others, also taste for salt.
