Not a cabbage fan? You’ve probably never tried this versatile veggie with Dijon mustard. Give this savory Dijon Roasted Cabbage recipe a try, and you just might have a new favorite side dish!

This roasted cabbage recipe with dijon mustard is a great side dish for any meal plus it is gluten and diabetic-friendly.

Ingredients

US Customary - Metric

  • 1 head green cabbage medium, core removed and cut into 8 wedges
  • 2 tablespoons olive oil
  • 1 tablespoon dijon mustard
  • 1 garlic clove crushed
  • 1/2 teaspoon black pepper freshly ground
  • kosher or sea salt to taste
  • 1 teaspoon caraway seeds

Instructions

  • Preheat oven to 400 degrees.

  • In a small mixing bowl, whisk together oil, Dijon, garlic, black pepper, salt, and 1/2 teaspoon caraway seeds. Brush all sides of cabbage wedges with the oil mixture and place on a large rimmed baking sheet. Sprinkle cabbage with the remaining 1/2 teaspoon caraway seeds. Cover cabbage with foil and roast 45 minutes, remove foil and roast 10 additional minutes or until lightly golden and tender. Serve immediately.

  4. I love this recipe! I skipped the caraway seeds, only because I didn't have any. I eat the roasted cabbage by itself as a side dish, & I add it to soups/stews. The cabbage is also a nice addition to other roasted veggies, like broccoli, cauliflower, carrots, celery, onions & garlic.

  8. This was amazing, but I wanted more than one wedge. Is that all you should eat when doing the 2 day detox or can you eat as much as you want?

  9. Besides adding flavor, the caraway seeds help control the gassines that can accompany cabbage. (Caraway seeds are so effective that it is often brewed as a tea, and given to colicky babies to relieve gas pain.)

  11. If roasting in the oven, what temperature would i use? Also could it be foi wrapped and made in the slow cooker while I am at work?

    1. Denise, 400 degrees for the oven. I can't say for sure about using the slow cooker for this recipe. If you have a warmer that comes on when the time is up, it should work. I would cook on low for sure. Thanks!

  12. I substituted greek yogurt for the olive oil. Also added a little soy sauce and worcestershire and cooked it on the grill. Amazing!

  15. i work in the morning, so there is no way how i can cook it in the morning. i have prepared it, put in the oven and timed to be ready by tomorrow before i go to work. will see how it turns out!

  16. We love this! My grandson loves it! We use a little extra garlic and sometimes instead of as salt we use soy sauce but it is all good!

  18. I use extra garlic and olive oil. Liberal amount of caraway seed. Instead of sea salt I sometimes use soy sauce.
